Within the Actions drop-down click on "Edit Admin Role":

Clicking on the drop-down will open all of the available roles to pick from:

Default roles cannot be edited. But custom versions of the default roles can be created. When creating a custom version of the default role make sure to select the custom role for the admin or the account will continue to use the default version.
